So, I’m not sure you’ve noticed but, we don’t actually eat a lot of red meat around here. It’s not just a taco preference, but a general rule in this house. I rarely buy red meat and when I do, it’s almost always with intent. Husband gets his beef in on the weekends while we’re out if he’s feelin’ it (so do I, I suppose), but for the most part I don’t buy it and I don’t make it unless we have a specific desire.

Why people buy guacamole in the store when fresh is so incredibly delicious and simple? Idaknow. (‘Course I have Mexican in my blood so, that might be my bias talking.)
The only component here that really requires any preparation is the steak.
I decided to spice it aggressively and cook it simply. A mix of chile powders (you can see last week’s Spicy Chicken Fajita Tacos for the exact mix I like to use), salt and pepper, a healthy squeeze of fresh lime in a hot pan and we are solid. A cut this thin only takes a couple of minutes on each side. Super quick and easy.
While the steak was gettin’ all yummy and sexy delicious (although it does need a flip when it’s good and seared on one side), I got together the rest of my ingredients. A little queso fresco (Mexican cheese), a few cilantro leaves, and our favorite hot sauce.
And then I just put it all together!
